From Independent Restaurants to Complex Operations: Insights from End-Users

As part of the project, we organized a workshop with end-users to discuss and evaluate the decision-making, diner, and kitchen frameworks we have been developing. To foster meaningful dialogue, the session was intentionally kept small, with four service providers (Sodexo, Antell, Scandic, and Café Chingon) joining the discussion.

The goal was to gain insights into decision-making processes, diner experience, and food waste reduction strategies through smart kitchen solutions, and to test the frameworks against real-world practices.

For instance, Chingon, representing a small independent restaurant, emphasized the importance of cost considerations, while larger operators such as Scandic highlighted the potential of waste tracking and automated smart monitoring for fridges and freezers. The rich exchange provided valuable feedback that allowed us to refine the frameworks with more detailed data, making them more relevant and adaptable to restaurants of different scales.
