Third Workshop: Reflecting, Developing, and Moving Forward

On May 9 to 10th took place our third workshop in Kasnås,  following an intense spring filled with running the second study, writing articles, and continuously thinking and developing our research. Each workshop feels like a vital checkpoint, allowing us to reflect on what we’ve learned and set the direction for what comes next. (see workshop 1 and workshop 2)

Over the past months, we have been developing three frameworks—one for diners, one for the kitchen, and one for decision-makers. These intellectual tools are designed a valuable research outcome of the project. Yet, as with any complex work, discussions are crucial. There is more work to do before these frameworks are fully refined and ready for the world to use. In addition we had been documenting the technical architecture.

During this workshop we also define three proof-of-concept (PoC) solutions that will be evaluated during the validation phase in the autumn. PoC 1, focuses on the forecasting model of data. PoC 2 aims to deliver information to kitchen personnel, and PoC 3 looks to gather information from diners.  These three PoCs are firmly grounded in what we have learned so far demonstrating how our research evolves hand-in-hand with practical application. The workshop provided plenty of space for discussion—ensuring we not only understand our findings but also translate them effectively into real-world impact.

A key challenge we constantly navigate is balancing theory with practice: turning what we learn into actionable insights without losing focus. We are also constantly working to improve data accessibility and availability, while enhancing the quality of the data itself.

Engaging different stakeholders throughout this process is essential, as their perspectives enrich both the research and its practical outcomes. At the same time, we must recognize that this is not always easy, each stakeholder brings their own pace, priorities, and context. Yet, this is exactly what makes the project so fascinating. The very challenges we face remind us that achieving something truly meaningful is never simple.
